Grilled Branzino with a Parsley Cilantro Vinaigrette Recipe. Branzino is the perfect fish to grill whole. A little bit of seasoning and a warm grill and you have the perfect meal for a summer evening.

Ingredients


Fish
branzino 2 1 lb each
olive oil 1/4 cup
salt 1/4 tsp to taste
black pepper 1/4 tsp to taste
Vinaigrette
Italian parsley 2 Tbsps minced
cilantro 1 1/2 Tbsps minced
white wine vinegar 1 Tbsp
olive oil 1/2 cup
salt 1/4 tsp to taste
black pepper 1/4 tsp to taste


Directions

  1. Remove the fish from the refrigerator 15 to 20 minutes before cooking.
  2. If you are using a gas grill set the temperature to medium. If you are using a charcoal barbeque get the coals to the point that white ash is showing and the coals are glowing and are spread out in an even layer.
  3. Coat the fish with the olive oil and season inside and out with the salt and black pepper to taste.
  4. In a bowl combine the minced Italian parsley and cilantro.
  5. Drizzle in the white wine vinegar and olive oil. Mix well and add salt and black pepper to taste. Set aside.
  6. Place the branzino on the grill and allow to cook for 6 to 8 minutes.
  7. Using a large spatula carefully turn the branzino to the other side and grill for an additional 6 to 8 minutes.
  8. Remove from the grill and allow to rest for 5 minutes.
  9. Spoon on the vinaigrette and serve.


Notes

Each branzino will feed 1 to 2 diners. Cooking a fish whole gives you a great deal of flavor unfortunately you have to deal with the bones. So when eating this dish be careful with the bones.
