Blackened Cajun Salmon. Seared salmon encased in a cajun crust with moist delicous salmon in the center. You experience different layers of flavor with each bite, a little heat, moist, creamy salmon.

Ingredients
salmon fillet | 4 | |
cumin | 1 Tbsp | |
coriander - dry | 3 Tbsps | |
garlic salt | 3 Tbsps | |
thyme (dried) | 3 Tbsps | |
oregano (dried) | 3 Tbsps | |
paprika | 1/2 cup | |
cayenne pepper | 1 1/2 tsps | to taste |
olive oil | 1/2 cup |
Directions
- Preheat oven to 325 degrees.
- In a bowl combine the cumin, coriander, garlic salt, thyme, oregano, cayenne pepper, and paprika. Mix well.
- Heat a cast iron skillet or oven proof sauté pan over high heat.
- Brush the salmon fillets with olive oil and dredge through spice mixture.
- Place in the skillet and fry on each side for 2 minutes.
- Remove the pan to the oven and roast for 3 to 5 minutes.
