Butternut Squash Puree Recipe. This is a very rich and delicious side dish that will provide you with that bit of color that is always welcomed in a meal.

Ingredients
butternut squash | 1 | 1 1/2 lb. - peeled, seeded, and cut into 1 inch chunks |
unsalted butter | 1/4 cup | |
heavy cream | 1/4 cup | |
dried ground ginger | 1/4 tsp |
Directions
- Steam the chopped butternut squash for 20 minutes or until tender.
- In a food processor or saucepan combine the steamed butternut squash, butter, heavy cream, and dried ginger.
- If you have a food processor puree until smooth. If not use a potato masher and mash the ingredients together until they are smooth.
- Add salt and pepper to taste.
Notes
Use a good vegetable peeler to peel the butternut squash. To remove the seeds from the squash use a tablespoon.
