Cantaloupe, Tomato, and Goat Cheese Salad Recipe. A sweet and tangy salad for a warm summer day.

Ingredients
Salad | ||
cantaloupe | 1/2 | |
cucumber | 1 | sliced on diagonal |
tomato | 2 | sliced |
goat cheese | 1/2 cup | |
mint (fresh) | 1 Tbsp | leaves torn |
Dressing | ||
olive oil | 1/4 cup | |
red wine vinegar | 1 Tbsp |
Directions
- Slice the cantaloupe into thin wedges. Remove the rind and chop.
- In a large bowl add the chopped cantaloupe, cucumber slices, and tomato slices.
- Crumble the goat cheese over and tear the mint leaves.
- In a small bowl whisk together the olive oil and red wine vinegar.
- Pour over salad.
- Add black pepper to taste.
