Cedar Planked Chicken and Vegetables Recipe. The next cool wave in cooking that has been around for centuries. Cooking on cedar planks was started in the Pacific Northwest by Native Americans. This is an easy way to cook an all in one meal that is enhanced with the flavor of cedar.

Ingredients
Chicken | ||
chicken breast | 4 | |
olive oil | 1/2 cup | |
salt | 1 tsp | |

black pepper | 1/4 tsp | |

Vegetables | ||
squash | 1 lb | chopped |
potato | 2 | peeled & chopped |
shallot | 3 | chopped |
herbes de Provence | 3 Tbsps | |
olive oil | 2 Tbsps |
Directions
- Dip a paper towel into the olive oil. Coat the plank evenly on the top and the sides. Do not coat the bottom of the plank.
- Place the plank in the oven and heat the oven to 350 degrees for 15 minutes.
- In a bowl combine the olive oil, salt, and pepper. Place the chicken breasts in the bowl and coat evenly.
- In bowl place the potatoes and cover with a wet paper towel. Place in the microwave and cook for 5 to 10 minutes until tender.
- Add the squash, shallots, herbes de Provence, salt, pepper, and olive oil. Mix well.
- Place the chicken breasts on the warmed plank and surround with the vegetables.
- Place in the oven and bake for 40 to 45 minutes until the chicken is cooked.
- Serve on the cedar plank.
