Chicken Lemon Grass Soup Recipe. A tangy crisp light soup.

Ingredients
water | 8 cups | |
yellow onion | 1 | quartered |
plum tomato | 1 | quartered |
lemon grass | 3 | lower thick portion only - pounded |
fish sauce | 1/4 cup | |
chicken | 1 | chopped |
lime juice | 1/2 cup | |
cilantro | 1/4 cup | chopped |
serrano chile | 4 | seeded and chopped |
mint (fresh) | 1/4 cup | leaves |
Directions
- In a stockpot combine the water, yellow onion, tomato, lemon grass, and fish sauce. Bring to a boil over high heat.
- Add the chicken and return to a boil.
- Lower to a simmer and cook for 40 minutes.
- Remove the stockpot from the heat.
- Stir in the lime juice, cilantro, serrano chile, and mint.
