Creole Coleslaw. A kicked up version of the classic coleslaw salad.

Ingredients
| mayonnaise | 1/4 cup | |
| Creole mustard | 1 tsp | |
| egg | 1 | hard boiled, peeled, and chopped |
| Italian parsley | 24 | chopped |
| cayenne pepper | 1 pinch | |
| salt | 1 tsp | to taste |
| black pepper | 1/2 tsp | to taste |
| napa cabbage | 1/2 | shredded |
| bok choy | 2 | stalks - green removed and sliced thin |
| shallot | 2 | sliced thin |
| red bell pepper | 1 | seeded and sliced thin |
Directions
- In a bowl mix together the mayonnaise, Creole mustard, hard boiled egg, Italian parsley, cayenne pepper, salt, and black pepper.
- In a large salad bowl combine the shredded napa cabbage, bok choy, shallots, and red bell pepper.
- Pour over the dressing and toss.
- Refrigerate for a 1/2 hour before serving.
