Grilled Branzino with a Parsley Cilantro Vinaigrette

Grilled Branzino with a Parsley Cilantro Vinaigrette Recipe. Branzino is the perfect fish to grill whole. A little bit of seasoning and a warm grill and you have the perfect meal for a summer evening.

Ingredients
Fish | ||
branzino | 2 | 1 lb each |
olive oil | 1/4 cup | |
salt | 1/4 tsp | to taste |
black pepper | 1/4 tsp | to taste |
Vinaigrette | ||
Italian parsley | 2 Tbsps | minced |
cilantro | 1 1/2 Tbsps | minced |
white wine vinegar | 1 Tbsp | |
olive oil | 1/2 cup | |
salt | 1/4 tsp | to taste |
black pepper | 1/4 tsp | to taste |
Directions
- Remove the fish from the refrigerator 15 to 20 minutes before cooking.
- If you are using a gas grill set the temperature to medium. If you are using a charcoal barbeque get the coals to the point that white ash is showing and the coals are glowing and are spread out in an even layer.
- Coat the fish with the olive oil and season inside and out with the salt and black pepper to taste.
- In a bowl combine the minced Italian parsley and cilantro.
- Drizzle in the white wine vinegar and olive oil. Mix well and add salt and black pepper to taste. Set aside.
- Place the branzino on the grill and allow to cook for 6 to 8 minutes.
- Using a large spatula carefully turn the branzino to the other side and grill for an additional 6 to 8 minutes.
- Remove from the grill and allow to rest for 5 minutes.
- Spoon on the vinaigrette and serve.
Notes
Each branzino will feed 1 to 2 diners. Cooking a fish whole gives you a great deal of flavor unfortunately you have to deal with the bones. So when eating this dish be careful with the bones.
