Lentil Artichoke Salad Recipe. A quick, healthy, fresh salad perfect for any occasion.

Ingredients
water | 5 cups | |
lentil | 2 cups | |
artichoke hearts - marinated | 1 lb | |
red onion | 1/2 | sliced thin |
feta cheese | 1/2 lb | crumbled |
basil (bunch) | 1 | shredded |
Directions
- In a saucepan pour in the water and lentils. Bring to a boil over high heat. Boil for 7 to 9 minutes.
- Drain the cooked lentils and add to a salad bowl.
- Chop the artichoke hearts and add to the salad bowl with its marinade.
- Fold in red onion, feta cheese, and basil.
- Toss well and serve.
