 Marinated Mozzarella Recipe

Ingredients
| mozzarella cheese | 3/4 lb | 3/4 inch thick and cut into bite size cubes | 
| olive oil | 1/2 cup | |
| lemon | 1/2 | juiced | 
| parsley | 1 Tbsp | chopped | 
| basil (fresh) | 1 Tbsp | |
| red pepper flakes | 1/4 tsp | 
Directions
- In a bowl combine the olive oil, lemon juice, parsley, basil, and red pepper flakes.
 - Add the mozzarella cubes and toss.
 - Cover with plastic wrap and let it stand for 2 hours at room temperature before serving.
 
Notes
When you go to your deli counter tell them to cut the mozzarella 3/4 inch thick.
