Pasta with Arugula and Tomatoes Recipe. Very easy, very fast, and very good. Great meal for a weekday night.

Ingredients
Pasta | ||

penne pasta | 1 lb | |
arugula | 1/2 lb | washed well and chopped |
Sauce | ||
olive oil | 2 Tbsps | |
olive oil | 2 Tbsps | |
onion | 1 | chopped |
garlic clove | 3 | crushed |
tomato puree | 3 1/2 cups | |
salt | 1 Tbsp | to taste |
black pepper | 1 Tbsp | to taste |
sugar | 1 Tbsp | |
pecorino cheese | 1/4 lb | grated |
Directions
- In a stockpot boil enough water to cook your pasta. Add the olive oil, salt, pasta, and arugula. Cook the pasta to your liking.
- In a large frying pan heat the olive oil.
- Add the onions and garlic. Sauté until the onions are translucent.
- Add the crushed tomatoes, sugar, salt, and pepper. Simmer for 20 minutes.
- Strain the pasta and arugula. Place on warm plates.
- Top the pasta with the tomato sauce and sprinkle with the pecorino cheese.
Notes
Sugar is added to the sauce to cut down on the acidity from the tomatoes. You can also add other ingredients to your tomato sauce to enhance the flavor like basil and oregano.
