Pasta with Tomato and Baby Arugula Recipe. A light and tasty pasta dish for any occasion.

Ingredients
Sauce | ||
olive oil | 2 Tbsps | |
yellow onion | 1 | chopped |
garlic clove | 2 | crushed |
tomato - chopped (canned) | 2 lbs | |
red pepper flakes | 1/4 tsp | |
salt | 1 tsp | |
black pepper | 1/4 tsp | |
Parmesan cheese | 1 1/4 cups | grated |
Pasta | ||
water | 12 cups | |
salt | 2 Tbsps | |
pasta | 1 lb | |
arugula - baby | 2 cups |
Directions
- In a sauté pan heat the olive oil over medium heat.
- Add the yellow onion and garlic. Sauté until the onion is translucent.
- Add the tomatoes. Bring to a boil and lower to a simmer. Add the red pepper flakes, salt, and black pepper to taste. Simmer for 30 minutes uncovered.
- In a stockpot bring the water to a boil. Add the salt to the boiling water.
- Drop the pasta. After 2 minutes add the baby arugula.
- When the pasta is almost al dente remove the pasta and baby arugula from the water to the sauté pan. Increase the heat to high and cook for an additional 2 minutes.
- Add the grated Parmesan cheese. Stir well and remove to a platter to serve.
