Peruvian Hot Sauce

Ingredients
vegetable oil | 1/3 cup | |
aji mirasol chile | 3 | stems removed |
onion | 1 | chopped |
garlic clove | 2 | minced |
peanuts - dry-roasted unsalted | 1/2 cup | |
crackers | 8 | |
Muenster cheese | 3/4 cup | grated |
evaporated milk | 1 cup | |
cilantro | 1 tsp | |
lemon | 1 | juiced |
salt | 1 tsp | to taste |
black pepper | 1/2 tsp | to taste |
Directions
- Heat 2 tbps of vegetable oil over medium heat.
- Saute the aji mirasol chile, onion, and garlic until the onion is translucent.
- Place the onion mixture into a blender or food processor and add the peanuts, crackers, cheese, evaportated milk, and cilantro.
- Puree until smooth and creamy.
- While the blender or food processor is running stream in the lemon juice and the remaining vegetable oil.
