Salsa de Calabacita Recipe. This is a light side dish or sauce for any main course. It goes great on tacos, broiled piece of chicken, or a tender filet of fish. You'll probably find yourself breaking out a spoon and eating straight from the sauté pan.

Ingredients


olive oil 2 Tbsps
red onion 1/2 chopped
garlic clove 2 diced
zucchini 2 lbs ends trimmed and chopped
tomatoes - diced & peeled 1 lb
salt 1 tsp to taste
black pepper 1/2 tsp to taste
cilantro 1/4 cup chopped


Directions

  1. In a sauté pan heat the olive oil over high heat.
  2. Add the onion and sauté till translucent.
  3. Add the garlic and zucchini. Sauté for 2 minutes.
  4. Pour in the tomato and bring to a boil.
  5. Add the salt, pepper, and cilantro
  6. Lower to a simmer and cover. Cook for 30 minutes.
