Salsa de Calabacita

| Salsa de Calabacita Recipe.  This is a light side dish or sauce for any main course.  It goes great on tacos, broiled piece of chicken, or a tender filet of fish.  You'll probably find yourself breaking out a spoon and eating straight from the sauté pan. | ||
Ingredients
| olive oil | 2 Tbsps | |
| red onion | 1/2 | chopped | 
| garlic clove | 2 | diced | 
| zucchini | 2 lbs | ends trimmed and chopped | 
| tomatoes - diced & peeled | 1 lb | |
| salt | 1 tsp | to taste | 
| black pepper | 1/2 tsp | to taste | 
| cilantro | 1/4 cup | chopped | 
Directions
- In a sauté pan heat the olive oil over high heat.
- Add the onion and sauté till translucent.
- Add the garlic and zucchini. Sauté for 2 minutes.
- Pour in the tomato and bring to a boil.
- Add the salt, pepper, and cilantro
- Lower to a simmer and cover. Cook for 30 minutes.
