Ingredients
| lime | 1 | juiced |
| peanut oil | 2 Tbsps | |
| garlic clove | 1/2 | crushed |
| cilantro | 1 Tbsp | chopped |
| scallion | 4 | cut into 2 inch pieces and shredded |
| red onion | 1 | halved & thinly sliced |
| chive | 2 Tbsps | cut into 2 inch pieces |
| salt | 1 1/2 tsps | to taste |
| pepper | 1/4 tsp | to taste |
Directions
- In a bowl, whisk together the lime juice, and peanut oil.
- Add the garlic and cilantro. Leave to marinate for 1/2 hour.
- Just before serving add the scallion, red onion, and chives.
- Toss together and season to taste.
