Preparation

  1. Heat your grill to medium heat.
  2. Lay out your vegetables onto a baking pan.
  3. Drizzle the olive oil over the vegetables.
  4. Season with salt and pepper.
  5. Allow to sit for 10 to 15 minutes.
  6. Place on the grill for about 5 minutes on each side until they get nice black grill marks.
  7. Remove and place back into the baking pan. Move the vegetables around the pan so they soak up the remaining olive oil.
  8. Slice up the portabella mushroom. Add salt and pepper to taste. Serve on a nice platter.

I used garlic salt to season the veggies, my wife loved them. It took a little longer than 5 minutes on medium heat, so I just put the flame on high to finish them up. Pretty easy to follow!
