Preparation

  1. Preheat oven to 400 degrees.
  2. Salt and pepper the butternut squash on both sides and drizzle with oil.
  3. Place on cookie sheet and roast for 18 to 20 minutes. Remove and allow to cool.
  4. While the butternut squash is roasting combine the red onion, red pepper flakes, oregano, sliced garlic clove, olive oil, and red wine vinegar.
  5. Place the roasted butternut squash in a serving dish pour over marinade and allow it to sit for 20 minutes.
  6. Garnish with fresh mint and serve.

This is easily one of my favorite recipes of all time. A friend made it for me about 7 years ago and I had written it down and lost it!I've been making it from memory but was so happy to find it here. This is such a great and different way to make butternut squash because it provides the squash a tangy, light feel and delicious new taste. Every time I make this recipe, people ask me for it and it's always a hit at dinner parties. You can't miss with this one! Make sure you slice the marinade ingredients very thin!
