Preparation

  1. In a large saucepan combine the flank steak, bay leaf, salt, and enough water to cover.
  2. Bring the water to a boil and lower to a simmer. Cook for 2 hours.
  3. Remove the meat and allow to cool at room temperature.
  4. Once cooled shred the meat and place in a plastic bag and add the lime juice, lemon juice, diced garlic, salt, and pepper. Allow to marinated for at least 1 hour to overnight.
  5. Heat a sauté pan over high heat and add the olive oil.
  6. Squeeze out the marinade from the meat and fry for 6 to 8 minutes.
  7. Add the sliced onions and continue to fry for an additional 10 minutes until the beef is crispy.
  8. Garnish with parsley and serve.

Matanzera

I have been making Vaca Frita for years and it is one of my favourites. I find that I will add more water and some beef base while simmering the beef and you will have wonderful stock for soup or Ropa Vieja recepy. I also add apple cider vinegar to the marinade.
